Gear: Skillet or small griddle, spatula, camp stove
Ingredients:
- 4 eggs, beaten
- 1/4 cup milk or water
- 1/2 cup cooked ground beef or trail sausage
- 1/4 cup shredded cheese
- 1/4 cup canned or fresh black beans
- 2 flour tortillas
- 1 tbsp oil or butter
- Salt & pepper
- Optional: diced onion, hot sauce, foil
Instructions:
- Heat the skillet with oil or butter. Sauté onion (if using) for 1–2 minutes.
- Add cooked meat and beans. Warm them through.
- In a bowl or camp mug, whisk eggs and milk. Pour into the pan.
- Scramble everything together, stirring until eggs are fluffy and set.
- Turn off the heat and mix in the shredded cheese. Let melt.
- Spoon mixture into tortillas. Add hot sauce if you’re bold.
- Wrap in foil and warm on low heat for 2–3 min if you want that classic “toasted burrito” finish.
