All the taco flavor. None of the dishes. These are ridiculously easy to prep, easy to customize, and the foil packet doubles as your plate. That means fewer dishes and more time sitting around the fire pretending tomorrow’s trail plan is finalized.

Ingredients
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup corn, canned or frozen
- 1 bell pepper, diced
- 1 small onion, diced
- 1 cup shredded cheese
- 4 large sheets heavy-duty aluminum foil
- Salt and pepper
- Tortillas, avocado, salsa, cilantro, lime or sour cream for serving, optional
How to Make It
1. Cook the meat first. Brown the ground beef in a skillet over your camp stove or fire. Drain excess grease if needed, then stir in the taco seasoning.
2. Build the packets. Divide the cooked beef between four large sheets of foil. Add black beans, corn, bell pepper and onion.
3. Seal ’em up. Fold the foil tightly around everything, leaving a little room inside for steam.
4. Hit the heat. Place the packets on a campfire grate over hot coals or on a camp stove over medium heat.
Cook for about 10–15 minutes, turning once, until the peppers and onions are tender.
5. Bring on the cheese. Carefully open each packet, sprinkle cheese over everything and loosely close it again for another minute or two.
Then attack.
Eat it straight from the foil or scoop everything into tortillas and turn it into tacos.
Trail Tip
Do all the chopping at home.
Dice your pepper and onion and toss them into a zip-top bag before leaving. You can even brown the taco meat beforehand. At camp, you’re basically dumping stuff onto foil and applying fire.
That’s our kind of cooking.
Switch It Up
Use shredded chicken instead of beef. Add jalapeños if your campsite needs consequences. Toss in cooked rice to stretch the recipe for a bigger group. Skip the meat and double the beans for an easy vegetarian version.
And if you’re cooking for kids, let everyone build their own packet. It dramatically reduces negotiations over onions.
