Grilled cheese went camping and came back considerably more dangerous.
This is the kind of camp dinner that looks like you worked much harder than you actually did. Crispy buttery bread, smoky pulled pork, BBQ sauce, melted cheese and a little onion, all cooked in one skillet.
The trick is bringing pre-cooked pulled pork, which turns the whole operation into about 10 minutes of work. Perfect for that first night at camp when you’ve spent more time leveling the vehicle than you’d ever admit.
Prep Time: 5 minutes
Cook Time: 10 minutes
Serves: 4
Difficulty: Very easy
What You’ll Need
- 2 cups cooked pulled pork
- ½ cup BBQ sauce
- 8 slices sturdy sourdough or country bread
- 8 slices cheddar, pepper jack or Monterey Jack
- ½ small onion, thinly sliced
- Butter
- Pickled jalapeños, optional
How to Make Them
Heat a cast-iron skillet over your camp stove or campfire grate.
Add the pulled pork and BBQ sauce. Stir and heat for 2–3 minutes, then move the pork onto a plate.
Butter one side of each piece of bread.
Place four slices in the skillet butter-side down. Add cheese, a generous pile of BBQ pork, a few onion slices and another layer of cheese.
Add jalapeños if you’re making good decisions.
Top with the remaining bread, butter-side up.
Cook for about 3–4 minutes per side, pressing lightly with your spatula, until the bread is golden and crispy and the cheese has melted into the pork.
Cut them in half.
Or don’t.
You’ve been outdoors all day. Nobody is grading presentation.
Trail Tip
This is an excellent first-night-at-camp meal.
Grab a container of pre-cooked pulled pork from the grocery store or smoke your own before the trip. Mix it with the BBQ sauce at home and pack it in the cooler.
Now dinner requires exactly three advanced culinary techniques:
Butter bread. Add stuff. Apply heat.
Switch It Up
Spicy: Use pepper jack and jalapeños.
Carolina-ish: Add a spoonful of coleslaw after cooking.
Extra Smoky: Add a couple strips of cooked bacon.
Chicken Version: Swap the pork for shredded rotisserie chicken.
Breakfast Version: Add a fried egg the next morning, assuming any pork survived dinner.
Gorilla Dirt Camp Kitchen Rule
If something tastes better while standing next to a dirty 4×4 with a cold drink in your hand, it’s probably camp food.
This definitely qualifies.
