Gear Needed:
- 1 medium pot or deep skillet
- Camp stove or fire
- Stirring spoon or spatula
Ingredients:
- 1 pouch (7 oz) or can of cooked chicken
- 1/2 cup instant mashed potatoes
- 1/2 cup mixed veggies (freeze-dried, canned, or shelf-stable pouch)
- 1 packet (or 1/2 cup) cream of chicken soup mix
- 1/2 tsp garlic powder
- 1/4 tsp thyme or Italian seasoning
- Salt & pepper to taste
- 1 tbsp butter or olive oil
- 1 cup water (+ more as needed)
- Optional: pre-made biscuit or bread for topping/dipping
Instructions:
- In your skillet or pot, heat butter/oil.
- Add veggies and a splash of water. Cook until soft (or rehydrated if freeze-dried).
- Stir in chicken, soup mix, seasonings, and 3/4 to 1 cup water. Simmer gently 5–7 minutes.
- Stir in instant mashed potatoes to thicken — adjust water as needed.
- Heat through until creamy and bubbling.
Trail Tip:
Bring one or two pre-baked biscuits in foil — warm them on the edge of your pan or fire ring and dunk them into this stew. If you’re solo, this meal scales down easily.
